We stopped by Atomic Cowboy on Colfax and ordered The Lola and the Cordon Bleu. Both came on their big, buttery biscuits, and wow — they are filling. The biscuits alone could almost be a meal, but they hold up really well to all the toppings without falling apart. The Lola had a great mix of flavors that felt a little unexpected but worked really well, and the Cordon Bleu was rich and comforting with the fried chicken, ham, and melty cheese. Both sandwiches were super flavorful and honestly heavier than we expected, in a good way. This place definitely has a strong morning/brunch niche — it’s the kind of food you want when you’re really hungry and want something different from the usual breakfast options. Creative, satisfying, and not trying too hard.

We went to Atomic Cowboy back in October while visiting a friend, and I'm still thinking about it! Part of that is because we had such amazing service. When my husband told Emilee that he was conflicted between trying a biscuit and a burger, she offered to comp the burger so he could try both. It was such a delightful offer and both items were delicious! Plus, I enjoyed the enormous cinnamon roll. It was such a fun brunch, and we really appreciated the hospitality and friendly service!

Super quick food! We barely got to draw on the kids menu before our food was brought out. The hash browns were super crispy, and the waffle fries were amazing.

This place is absolutely amazing! It was highly recommended for late night, excellent food & I just had the best biscuits and mushroom gravy, that I've ever had. Thanks Casey & staff! Try it, you will like it.

This place is such a fun spot with great decor and wonderful service. They offer all-you-can-drink coffee, and oat milk is available as a dairy-free option. You just pay for one cup and enjoy as many refills as you like—the coffee is local and seriously delicious. Inside the Atomic Cowboy, there are actually two restaurants: one focuses on amazing pizza, and the other builds their menu around fresh, flaky biscuits. You can order from either, which makes for a super flexible and fun dining experience. There are awesome options for kids, fantastic salads, solid burgers, and some truly tasty French toast. We’d definitely come back next time we’re in the area!
